• ½ cup sour cream
• 1 cup sliced cooked zucchini, cooked in butter until tender
• 1 cup carrot, shredded
• ½ cup onion, chopped
• 1 cup Portbello mushrooms
• 2 cups herb seasoned stuffing mix
• ¼ cup melted butter

Sautee mushrooms and onions in olive oil until tender.

Combine all except stuffing mix and butter. Place in buttered baking dish.

Toss stuffing and butter and spoon over mixture.

Bake at 350º for 30 minutes.
